After being able to add several new Sims since the update, I am wondering what jobs & hobbies to give them. What do you feel is the best carreer and why? What do you feel is the best hobby and why?
Also, once a Sim has mastered a career and/or hobby, is there a reason for them to switch careers and or hobbies? What or is there a benefit to mastering all careers and/or hobbies? Especially when I have completed all of my hobbies to their fullest extent and now I am just doing hobbies for LPs.

Personally, I've always given my sims a career or hobby because it fits their personality or story I have for them. I'm sure I could probably earn more xp and simoleans if I'd just gone for the most profitable ones but I find the game more fun if I imagine they are doing a job or hobby for a specific reason
In terms of picking a career, it depends on what time of the day you can play and whether you can send them off to work at the right time. I think athletes earn the most for the least amount of hours. But there is no real advantage to having them master one career over another, it doesn't give the sim any extra skills other than earning more when they go to work.
For hobbies, I think they all have their good and bad points so I have a few sims doing each hobby - again this may not be as profitable but I like the variety rather than doing one thing all the time. I find fashion designing the best for earning cash and a few LPs but after a while the tap tap tapping gets tedious so I have a break with some woodworking or skating

I give my Sims jobs that fit their stories (or in the case of my first batch, I made their story fit their job). As for hobbies, I see a lot of people recommending getting at least 1 sim to the top of every hobby and keeping 1 sim as the master of each hobby so if there is a new quest that requires a level 6, you have one handy (as in the recent ghost hunting challenge where you had to have a 6 to get to an 8 and the apparently upcoming fishing challenge where you'll have to do the same thing (I hate fishing - it is the worst and the slowest, but I am determined to get ONE sim through it).
For your other Sims, even once they master a hobby, it gets you out a lot of XP if they forget their first hobby and rotate through the other ones. I am doing that with mine, once my current group of woodworkers and skaters saves up 200 LP for me (we're at 162 this morning).
I don't rotate them through fishing since you can only do one at a time. I have 2 that fish, one days and one nights, when they are not at work. Whoever gets to 6 first will stay there and the other will move on to something else, unless this upcoming quest gives me a darn good reason to keep more than one fisher sim.

I dont really do story lines...idk why. But, as our fearless leader Perturbee says "slow down and read. Many silly questions are asked by not reading." Oops! Im THAT girl. In the blog she lists all career wages, XPs, and hours. For ONE HOUR worth of work as an Athlete, you earn approx. just as much ($1000 and 1,100 XP) as the other 8hr jobs. 12:30PM-1:30PM.
As for hobbies, once youve gotten ALL the hobby has to offer, swimming is a waste bc the ONLY thing you get is a few XP for each medal (and the 3 LPs upon completion) so theres not much to gain by it. It would seem hobbies like woodworking, fashion, ghost hunting..make you the most money, LPs, and XPs.

My sims rotate through hobbies except for there is always one primary for each hobby that does that hobby forever, and I also only have one sim who fishes because only one sim can do it at one time and I don't like that hobby much. I feel woodworking is the very best hobby because it involves no mini-games when you get the woodworking bench at home. Fashion is the most profitable for me, but does have the little lightbulb hitting mini-game. Ghost hunting results in the most LPs for me but does involve tapping each ghost three times, so ultimately woodworking is best for large numbers of sims to be doing in 4 minute rotations
I like to rotate sims from one woodworking to ghost hunting and to fashion design, then back to woodworking. They earn lots of xp, LP and Town Value bonuses while going up the ranks in the hobbies, so unless they are the primary of their hobby, they will always rotate over to another hobby once they master their current one. This is a great strategy!
As for careers, I stick with what suits the sim character best, as well as my personal play schedule. They only change jobs if there is a task that requires it, and again, I always have at least one primary in each career. This is for competition purposes.

Best career is Athlete (leveled up), best hobby is Fashion Design (for $ and XP).
That's the short and simple answer, although everyone does something different.
Personally I don't bother with careers anymore (planting or doing hobbies is much more rewarding). I try to get one Sim maxed out in each career, just in case the Competition Center ever becomes a must in a future update, but otherwise the only one I strive for are Mad Scientists for that Achievement bonus for having quite a few of them. Preteens I will send to school, though, as its the only way for them to earn $ and not just XP. Also, would advise keeping some sims without a career, as some of the goals require "becoming an artist" or "have X number of Sims be in real estate" and would be tragic if you had to lose progress on a Sims' career to achieve those.

It's actually not too bad to have a sim temporarily change a career. I do it fairly often. I have 2 sims in each career and when a goal comes up that says have 4 sims employed as whatever, I take a random 2, quit their job, pick the new job and the goal completes. Then I quit that new job and put them back where they were - they usually only go down 1 level and you can get them back up pretty quickly by sending them off to work or having them practice their profession once or twice (3 hours). I usually pick a teacher and a real estate broker since they make the least. Athletes used to work only an hour a day at the top level but that changed to 4 hours a few updates ago. They still have the shortest working hours though.
